Garlic Lime Marinated Pork Chops

Last night's dinner recipe is ANOTHER fabulous dinner courtesy of  Gina's Weight Watcher Recipes.  Again, I am not following the WW PLAN, however she has healthy  meal selections, perfect to make on a busy weeknight. This can also be thrown on the grill and you can use a pork tenderloin for the same recipe. 

Garlic Lime Marinated Pork Chops

The lime zest gives these chops an extra zing. Adjust the seasoning to your liking. Make these in the broiler or on the grill. Serve this with cilantro lime rice on the side.
Servings: 4 • Cook Time: 8-10 minutes  Points: 6 ww points

  • 4 (6 oz) lean boneless pork chops
  • 4 cloves garlic, crushed
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1/2 lime, juice of
  • lime zest
  • salt and fresh pepper
Trim any fat off pork. In a large bowl season pork with garlic, cumin, chili powder, paprika, salt and pepper. Squeeze lime juice and some zest from the lime and let it marinade at least 20 minutes.


Line broiler pan with foil for easy clean up. Place pork chops on the broiler pan and broil about 4-5 minutes on each side or until nicely browned.

Balsamic Chicken with Roasted Vegetables

Remember yesterday I said that we were trying to eat lighter and healthier? Last night's dinner recipe is courtesy of  Gina's Weight Watcher Recipes.  Although I am not following the WW PLAN, this is a healthy choice meal and is a complete meal in one pan, perfect to make on a busy weeknight. Prep time is quick, throw it in the oven and it's ready in 35-40 minutes. For easy clean up you can make this in disposable tins.

Balsamic Chicken with Roasted Vegetables
Gina's Weight Watcher Recipes
Servings: 5  Size: 2 thighs plus vegetables  Points: 8 ww pts
Calories: 347.1 • Fat: 17.0g  Protein: 31.1 g  Carb: 19.2 g  Fiber: 5.8 g 

  • 10 (20 oz) boneless skinless chicken thighs
  • bunch asparagus, ends trimmed, cut in half
  • 3 red bell peppers
  • 1 cup carrots, sliced in half long way
  • 2 red onions, chopped in large chunks
  • 1 package sliced mushrooms
  • 1/2 cup plus 2 tbsp balsamic vinegar
  • 1/4 cup extra virgin olive oil
  • 1 tsp sugar
  • salt and pepper
  • 3 tbsp fresh rosemary
  • 2 cloves garlic, smashed and sliced
  • 2 tbsp oregano or thyme
  • 4 leaves fresh sage, chopped
Preheat oven to 425°. Wash and dry the chicken well with a paper towel. Combine all the ingredients together and using your hands and arrange in a very large roasting pan. The vegetables should not touch chicken or it will steam. All ingredients should bespread out in a single layer, if necessary use two baking dishes or disposable tins to achieve this. Bake for 35 - 40 minutes.

Tilapia with Lemon and Dill

I am attempting to loose weight and eat healthier. My choices as of late have not been great. A lover of fish, lemon and dill, I chose this dish for last nights dinner because it makes the fish full of flavor without all the fat. I always use tilapia, however my husband will either eat halibut or mahi mahi. We enjoy this dish because it is light, healthy and, if not overcooked, your fish will be tender and flakey. Having raised my kids on fish, they also love it. Start them young!

Tilapia with Lemon and Dill

  • 3 fillets of tilapia
  • 2 tsp olive oil
  • 2 tbsp fresh dill, chopped
  • 2 cloves garlic, minced
  • 1/2 tsp lemon zest
  • Salt & pepper to taste


Combine the above ingredients in a large zip lock bag making sure to mix them thoroughly. Marinate for 2-4 hours. Only add the zest for marinating...don't add lemon juice until you are cooking the meal because the acid in the lemon will start to cook the fish.
  • 2 lemons juiced
  • 2-3 tsp butter
  • 1/2 tsp lemon zest
  • Additional fresh dill for garnish
Preheat oven to 450 degrees. Spray a glass baking dish with cooking spray. Add the lemon juice to the fish in the bag. Combine ingredients well then pour into baking dish; season the fish well with sea salt and fresh cracked pepper then add bits of butter to the top of the fillets. Cover with a lid or tinfoil and cook for 10-12 minutes per 1 inch thickness. Garnish with chopped fresh dill, lemon zest & lemon slices. Enjoy.

Evolve™ Grill



The Evolve grill cooks EXTREMELY FAST! For our George Foreman Evolve Grill initiation, for the first time we cooked slider hamburgers (While there is a slider pan, our store sells sliders pre-made and I had grabbed them without thinking about making my own). We made 18 hamburgers cooked in less than 10 minutes! They were not only completely cooked through, it took the fat off the meat. I have always loved George Foreman grills because we can cook our meals quickly, a plus when you work full time and have an hour commute home. I do not want to be stuck in the kitchen.



The grilling plates come off easily. All you do is pull each handle on each side, when they have cooled. They clean up quite easily. I did scrub because of the lines but I had both clean in less than 5 minutes. 


Excited to try out the deep baking dish plate that I received, I mixed up a chocolate cake. I poured half the batter in the George Foreman Evolve Grill and set at 350 degrees for only 20 minutes. I always test my cakes, but this cooked so fast that I could not believe it was done! It was! Amazing! We made the other half of the batter for a layer cake. 


I’m thrilled with the George Foreman Evolve Grill. With all the advantages, this appliance is a keeper!

I am a married, a mom, nd work full time.We are very close. I saw a family motto on someone else’s blog (I wish I could give credit, but I cannot remember who’s blog) that best describes my feelings on my home and family:

He is the light of my life! I am probably like most of you, where I want “things” but have no “extra” money. Our circumstances may just be different. My husband and I both work for a Fortune 500 company that has also been listed on Fortune’s Best Places to Work, repeatedly. Due to the economic crisis, those who didn’t lose their jobs in layoffs were forced to take pay cuts, lose merit increases, stop of profit sharing, and no bonuses.

We were forced to change the way we lived in order to pay for basic necessities.

A friend came into work and said she saw a program on TV where someone went shopping and got her groceries close to free. Well, that’s all I need to hear and I researched. We started couponing to make our dollar stretch. We learned quickly that we can save a lot and sometimes get everything almost free! It helps us out and helps my kids out.

I want to challenge you like I do myself. When you go to a store, look at how something is made. Think to yourself, is this something I can copy? This way of thinking can be applied to a lot of items. Clothing, furniture, crafts, etc.
